This past weekend we were handed a lemon. We had made plans to travel with some great friends to Michigan to enjoy a weekend with more friends! However, some of the younger kids caught some winter bugs and Dad was also a little leery of the forecast. So, we decided it was probably best to stay home this time. It was a disappointment.
Life had given us a lemon: It was time to make lemonade.
Actually, we didn't literally make lemonade in this instance - instead we reached for the Lemon Oil and set about shining up the house :). Mom has had a list of housecleaning jobs that has been collecting dust itself for quite a while. She pulled it out, Dad gave everyone a job, and by suppertime things were in tip-top shape! Dad, Jared, and Lily tackled the living room and dining room...

Once we had accomplished what we had on our list, Dad put together a delicious Italian feast for us:). Oh, and guess what we had for dessert?! Lemon Meringue Cheesecake :) You know, in my opinion, that's even a better way to use a lemon :).
Housecleaning wasn't what we were anticipating for this weekend, and of course being with friends would have been better, but all-in-all it was a pretty good day! It was enjoyable to work together as a family, we got a good amount done, and Lemon Cheesecake was a great way to top it off :). -Faith
You made the lemon meringue cheesecake sound much better than it was - first of all, it wasn't lemon meringue, because I ran out of energy and decided not to make the meringue. Decided that the canned whipped cream we had in the fridge would work just fine - it was runny like milk! Then I used lemon peel instead of lemon zest - know the difference? It was a little bitter...
