A Great Discovery

On Tuesday evening I made a delicious pie for dessert. It turned out wonderful and everyone thought it was awesome, including those of us that are getting very sick of one more thing made from zucchini! (not me) We thought we would share the recipe with you!

Zucchini Pie

Peel and cut zucchini into pieces. Boil until tender - drain.
Put in the blender:
3 cups zucchini
1 cup of sugar (I used 1/2 cup of turbinado sugar, and four drops of stevia)
1 cup 2% milk
1 egg
2T butter
1/2 teaspoon salt
2T flour
1 t vanilla

Pour into pie crust. Sprinkle with nutmeg and cinnamon. Bake a 425 for 10 min. then at 350 for 25 min.
